CREAMY CHICKEN PASTA

When all you feel like is some comforting pasta, then look no further because I have the most delicious creamy chicken pasta that will just stick all the boxes!

INGREDIENTS

2 chicken breasts

Sprinkle taco seasoning

Olive oil

1 red onion, finely diced

400g mushrooms, sliced

190g sundried tomato pesto

300ml thickened cream

Handful baby spinach

390g fettucine

METHOD

In a bowl, add chicken, taco seasoning and a splash of olive oil- rub through.

Preheat oven to 180 degrees.

In a large fry pan, add chicken and sear on both sides for 5 minutes until brown.

Transfer to the oven and cook for 20-25 minutes.

Meanwhile in the same fry pan, add onion and mushroom.

Cook pasta as per instructions.

When mushroom is cooked down and browned add pesto, cream and baby spinach.

Slice cooked chicken, place drained pasta into bowls, top with chicken and then top with the sauce in fry pan.

 

A super simple and tasty meal that you can definitely add into your weekly dinners.
