LUNCHBOX BANANA BREAD SCROLLS

If you love banana bread and love a scroll- then this is a match made in heaven. You'll thank me later!

INGREDIENTS

2 cups self raising flour
1 1/2 cups Greek yoghurt
2 small bananas, over ripe
1 tsp cinnamon ground
1 tbsp brown sugar
Extra self raising flour to dust

METHOD

Preheat the oven to 180 degrees fan forced.
In a large bowl add Greek Yoghurt and self raising flour.
Mix until it forms a dough. (Add more flour if need be)
Sprinkle bench with flour and put dough on there. Knead a little till you can start rolling it out.
(Make sure flour is always on your benchtop otherwise it will stick)
Roll with a rolling pin or a glass.
Mix the bananas, cinnamon and brown sugar in a bowl and spread over the rolled out dough.
Carefully start rolling the dough up, it WILL feel messy.
Once you have a long roll, carefully cut the scrolls (as per video).
Again, WILL feel messy- I call it rustic baking😉
Place all together in a baking tray with baking paper and cook for 30 minutes or until golden tops and cooked in the centre.
Pull apart to eat, or cut up for kids lunchboxes.
